Bannock for Indian Summer Day
3 cups all-purpose flour
1 teaspoon salt
2 tablespoons baking powder
1/4 cup butter, melted
1 1/2 cups water
Place all dry ingredients into a bowl and mix well. There is nothing worse than biting into a wedge of bannock and finding a lump of baking powder.
Add melted butter and water. I find that a large metal bowl seems to work the best. It takes less water for some reason.
Remove dough from bowl and knead until dough resembles bread dough. Pat into a circle if you are baking, or cut with a cookie cutter if you plan to fry the dough. If you plan to bake, you might want to score the circle for easier cutting later.
You can either bake the bread in a greased frying pan or bake on greased cookie sheet in a 350 degree oven for about 30 minutes.
