How to make Mexican Hot Chocolate

There is hot chocolate out of a tin and then there is homemade hot chocolate. And just in case you are wondering about the difference… Mexican hot chocolate is heavily spiced with cinnamon, and you use bittersweet chocolate. And if you like it even spicier, the recipe suggests a pinch of chili powder. Now that is definitely taking hot chocolate to the next level! Here are the ingredients…

* 6 cups whole milk
* 1 stick Mexican (Ceylon) cinnamon
* 1 vanilla bean, split lengthwise
* 8 oz. bittersweet chocolate, roughly chopped
* 2 tbsps. sugar, or more, to taste
* 1 cup whipped cream
